Lemon Pepper Orzo Risotto

This is a quick easy recipe that is marvelous comfort food!

2 1/2 cups of chicken broth
1 cup of Orzo pasta

Bring this to boil and simmer until there is only some excess liquid & pasta is still crunch. Turn off the heat and stir in:

Juice of one lemon
lemon zest
1 T pepper (don't be shy with this)
1/4 cup of half & half or cream
1/2 cup of Parmigiano-Reggiano (I use the good stuff, but in a pinch the green can will work too)
2 T of marscapone cheese (I often substitute sour cream or even cream cheese)
Fresh green chives chopped (optional)
2 T of butter

Put a lid on the pot and let it all melt together for a couple minutes, than stir well and serve!
