My friend Joy posted this crockpot recipe on her blog and I asked her if I could post it on here. We made it this last week and it was SO tasty and SO very easy! You can't get any easier than this!!!
Easy Santa Fe Chicken
1 can black beans (drained and rinsed)
1 can corn (drained)
1/2 C salsa
2-3 boneless, skinless chicken breasts
1/2 C salsa
Put everything in crockpot in the order listed. Cook 2-3 hours on high or 6-8 on low. Use spoon to kind of cut up chicken and mix everything before serving. Serve over rice and garnish with grated cheese, sour cream and/or avacado. Also yummy with tortilla chips. Serves 4-6.
