Nacho Cheese


Just in time for the super bowl, I bring you nacho cheese. Not cheese sauce, mind you, this is definitely nothing fancy, just that football stadium, gas station nacho cheese you're used to. (but better for you, of course)

Very simple and very good for that nacho craving. I hear it's great on cheese steaks, chili cheese fries, and what not as well.

We just did it plain on some tortilla chips with jalapenos. YUM!

2 Tbs butter
2 Tbs flour
1 cup milk (I used chicken broth, very yummy, next time I will try milk though)
7 slices processed American cheese (I didn't know if I could use Velveeta, so I just used Kraft singles)
1/4 tsp salt (not needed in my mind)

In a medium saucepan over medium heat, melt butter and stir in flour. Pour in the milk and stir until the mixture thickens. Stirring constantly, mix in cheese and salt. Continue to cook and stir until cheese has melted and all ingredients are well blended, about 5 minutes.
