Pumpkin Cookies

These are my favorite pumpkin cookies, if you don't like them I will be seriously sad because they are amazing and always make me think of Fall time.... plus there are relatively easy so try them!

Pumpkin Cookies
2 cups sugar
1 cup shortening
1 cup margarine
2 cups pumpkin
2 eggs
cream above together

5 cups flour
1 t pumpkin pie spice
2 t soda
2 t cinnamon
4 t baking powder
1 t salt
1/2 t nutmeg
1/2 t cloves
2 t vanilla
(this recipe makes a ton -- about 5 dozen so unless I am planning on bringing them to people, I sometimes half it, although Libby's conveniently comes in cans with 2 cups)
Bake at 350 for 12-15 minutes on a greased cookie sheet

Frosting:
1/4 cup margarine
5 T milk
heat until a few bubbles appear around edges of pan and add
1 t vanilla
1 box powdered sugar(3 3/4 cups)
Drizzle frosting over cookies
Enjoy!

These are sooooooo good! Even without the frosting...cuz I didn't have time to make it! But I'm sure they are a whole lot better with it!
