Mango Chicken

This is a recipe I got from Gwen, who got it from our friend Kari. It is the perfect summer meal and the chicken in this marinade is DELICIOUS!!!


Mango Salsa:
1 8oz can pineapple tidbits, drained (reserve juice for marinade)
3/4 cup fresh mango/peaches diced
1/3 cup red bell pepper, chopped
1/3 cup red onion, chopped
2 Tbs fresh cilantro, chopped
1 Tbs lime juice
1 tsp jalepeno pepper, diced
1/2 tsp ground ginger

Combine all salsa ingredients and refrigerate until ready to serve. I have found that this is best if you let it sit awhile for all the flavors to blend together.

Chicken Marinade:
reserved pineapple juice
1/3 cup soy sauce
1/4 cup brown sugar
1 glove garlic

Combine all marinade ingredients in a ziploc back, Add your boneless skinless chicken breast and refrigerate. You can marinade for as little as 1 hour or up to as long as overnight. I suggest at least 2-3 hours. This chicken comes out so moist and delicious. We usually grill it.
Serve chicken with mango salsa and rice. Yummy!
