Black Bean Couscous Salad

I love love love this salad. It is super yummy. We got it from a lady in our ward, Laura.

10 ounces couscous
chicken broth
4 green onions, chopped
1 red bell pepper, chopped
1/4 cup cilantro, chopped
1 cup frozen corn
2 cans black beans, drained and rinsed
1 cup tomatoes, diced or 1 cup cherry tomatoes, halved
3 tablespoons olive oil
3 tablespoons lime juice
2 teaspoons red wine vinegar
2 teaspoons cumin
salt and pepper to taste

Cook the couscous according to package instructions using chicken broth in place of water. Meanwhile, in a large bowl combine green onions, bell pepper, cilantro, corn, black beans and tomatoes. In a small bowl combine olive oil, lime juice, red wine vinegar, cumin, salt, and pepper. Add the dressing to the large bowl and mix well. Add the cooked couscous and mix again. The end!

honestly, since i tried this salad the first time we have had it a minimum of once a week. It is light, refreshing, and healthy. yummy, yummy, yummy.
