Frosted Apple Cake

I had some homemade applesauce that I needed to use up and this was the PERFECT recipe for it. Very yummy!! Probably the most moist cake I've ever had!

Cake:
2 1/2 c. all-purpose flour
2 c. sugar
1 tsp each baking powder, baking soda, ground cinnamon and salt
1 1/2 c. applesauce
3/4 c. vegetable oil
2 eggs
1 c. chopped walnuts, divided

Frosting:
1/2 c. butter or margarine
4 1/2 c. confectioners' sugar
6 Tbsp. apple juice, divided

Preheat oven to 350. Grease and flour a 9x13 pan. Sift dry ingredients into a large mixing bowl. Add applesauce, oil and eggs. Beat at low speed until moistened.

Beat batter high speed for 2 minutes. Fold in 1/2 c. walnuts. Pour into prepared pan. Bake for 30 minutes or until a toothpick inserted in center comes out clean. Cool in pan.

For frosting, heat butter in a saucepan, stirring continually, over medium heat until lightly browned. Beat melted butter, confectioners' sugar and 4 Tbsp apple juice in a bowl.

Add remaining apple juice to bowl to make frosting a "spreadable" consistency; beat until creamy. Stir in 1/4 c. walnuts. Spread over cake. Sprinkle with remaining walnuts.
