Cinnamon Ripple Muffins

This recipe is from Family Fun. They are quite yummy.

Ripple:
1/ 2 C. brown sugar
4 T. butter, in small pieces
1/ 4 C. flour
2 t. cinnamon

Batter:
2 C. flour
2 t. baking powder
1 t. baking soda
1/ 2 t. salt
1/ 2 C. butter at room temperature
1/ 2 C. sugar
2 eggs
1/ 2 C. buttermilk
1 t. vanilla

Combine ripple ingredients and blend them. Set aside. Heat oven to 400* and spray the bottoms of 12 muffin cups. Combine flour, baking powder, baking soda, and salt. In a separate bowl, beat butter and sugar together. Mix in eggs, buttermilk and vanilla. Stir in dry ingredients. Sprinkle ripple over the batter. Fold it in a couple of times. Divide the batter among the muffin cups. Bake for 13 minutes. Let muffins cool on a wire rack for 5-10 minutes.
