Fresh Apple Cake

4 cups diced apples
2 cups brown sugar
½ cup oil
2 beaten eggs
1 cup chopped nuts
1 teaspoon vanilla
2 cups whole wheat flour
2 teaspoons soda
2 teaspoons cinnamon
1 teaspoon salt

Mix all ingredients together. Pour mixture into greased and floured 9x13 inch pan and bake at 350* for 50-60 minutes. This cake is good served hot with whipped cream, or as a pudding with a caramel sauce and whipped cream on top, or cooled with cream cheese frosting.
