Chocolate Malt Cupcakes

These are very quick to do, but the frosting tastes like a chocolate malt. We made these and the Red Velvet Cake for Valentine's Day. If you put a marble in the side of your muffin tin between the cupcake liner and the pan, then you get heart shaped cupcakes without buying a heart shaped pan.

Chocolate Cupcakes

Mix a chocolate cake mix, except use 1 cup of buttermilk instead of the liquid called for in the instructions. Use the same amount of oil and 4 eggs instead of the amount called for in the recipe. Bake at recommended temperature, except start checking them at around 12-15 minutes as they seem to cook a little faster.

Chocolate Malt Frosting:

1 cup whipping cream
1 cup powdered sugar
4 Tablespoons malted milk powder
2 Tablespoons cocoa powder

Whip cream until it forms soft peaks. Add remaining ingreadients and whip until it forms stiff peaks. Frost cupcakes. I found that it is easiest to put frosting into a ziploc and pipe it onto the cupcakes.
