Puff Apple Pancakes

This is a really good autumnal/winter breakfast. Plus it's super easy.

6 eggs
1 cup milk
1 cup flour
1 pinch salt
1/2 tsp vanilla
3 TBS butter
1 tsp cinnamon
1/4 cup sugar
2 tart apples (peeled, cored, and sliced)

Preheat oven to 425. Place butter (cut in cubes) and apples in the bottom of a 9x13 pan. Sprinkle with cinnamon and sugar. (A hint of brown sugar also works well) Place pan in preheated oven while you mix up the next ingredients. Don't allow the butter to burn, it just needs to melt.
In a mixing bowl or blender mix eggs, salt, milk, and vanilla until frothy. Add flour and mix until smooth. Pour the egg mixture over your apple and butter in the bottom of the pan. Return to oven and bake for 20 minutes or until it is puffy and brown.
Serve with butter and syrup.
