Chewy Coconut Macaroons

I thinks this counts as a Christmas "Candy" Britt! I know its kind of a funky recipe that take conversions, but the head chef of our Cafe here at Noni gave it to me and they are amazing!

• 185 g flaked coconut
• 95 g all-purpose flour
• 0.8 g salt
• 1 (14 ounce) can fat free sweetened condensed milk
• 8 ml almond extract
1. In a bowl, toss together the coconut, flour and salt. Stir in sweetened condensed milk and almond extract until blended. (Mixture will be thick and sticky.)
2. Drop by rounded teaspoonfuls 3 in. apart on baking sheets lightly coated with nonstick cooking spray. Bake at 300 degrees F for 18-22 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks.
Nutritional Analysis: One cookie equals 83 calories, 3 g fat (2 g saturated fat), 1 mg cholesterol, 41 mg sodium, 13 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchanges: 1 starch.
