Dinner in a Pumpkin

Since it's pumpkin season, I thought I would share my mother-in-law's recipe for dinner in a pumpkin. It's one of our favorite Halloween traditions!

1 lb ground beef, browned and drained
2 Tbs. soy sauce
2 Tbs. brown sugar
1 can cream of chicken soup
1 1/2 cups cooked rice
1 pumpkin, cleaned out
mix soy sauce and brown sugar til smooth. Add soup. Add cooked ground beef and cooked rice. Mix well and put into cleaned out pumpkin. Put lid back on pumpkin and place on a cookie sheet. Bake at 350 degrees for 2 hours.
*This recipe fills one small-regular sized pumpkin

Remember when serving to scoop out the pumpkin too...it's the best part!

also if you have too much of the meat mixture to fit in your pumpkin, you can just put it in a casserole dish and bake it at 350 degrees for 30-45 minutes.
