Autumn Cheesecake

This is a delicious Apple Cheesecake that I usually make in the fall.

1 cup graham cracker crumbs
½ cup chopped pecans
3 tablespoons white sugar
½ teaspoon ground cinnamon
¼ cup unsalted butter, melted
½ teaspoon ground cinnamon
1 pound cream cheese
½ cup white sugar
2 eggs
½ teaspoon vanilla extract
4 thinly sliced apples
¼ cup chopped pecans
1/2 teaspoon cinnamon
1/3 cup white sugar

Preheat oven to 350*. Combine graham cracker crumbs, ½ cup finely chopped pecans, 3 tablespoons sugar, ½ teaspoon cinnamon and melted butter; press into the bottom of one 9-inch spring form pan. Bake at 350*for 10 minutes. Combine cream cheese and ½ cup sugar. Mix at medium speed until well blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla; pour into the baked crust. Toss apples with combination of ½ teaspoon cinnamon and 1/3 cup sugar. Spoon apple mixture over cream cheese layer and sprinkle with ¼ cup chopped pecans. Bake at 350* for 1 hour and 10 minutes. Loosen cake from rim of pan and let cake cool before removing rim of pan. Chill cake well before serving. I usually make this the night before or the morning of.
