24 cups peeled, cored, sliced apples
5 ½ cups sugar
1 ¼ cups corn starch
10 cups water (or use ½ apple juice)
1 teaspoon salt
2 teaspoon cinnamon
¼ teaspoon nutmeg
3 tablespoons lemon juice
yellow food coloring (just for color)
Combine sugar and cornstarch together. Add to water and bring to a boil. Add remaining ingredients except apples. Fill quart jars about 1/3 of the way up with the sauce. Pack the remainder of jar with apples. Process in a boiling water bath for 20 minutes.
